Getting Your Kids To Eat Beets
It's a tricky game we play as parents, getting our kids to eat veggies. In our home, it has become a game of wits, and most of the time, my wits seem to lose out big time to my kid's taste buds. But today, I won!
Today, I snuck in an entire beet into my kid's "Valentine's Day Waffles". They loved these pretty, red waffles so much, no one even thought to question the flavor.
These waffles have no added sugars, as I used an apple to sweeten them.
I topped the kid's waffles with Organic Vanilla Yogurt, and mine with condensed milk. (Mama needs some sweetness in her life.)
Recipe
1 peeled Beet - diced
1 peeled Apple - diced
1/2 cup of Plain Yogurt
1 egg
1 cup of Coconut Flour
Peel and dice your beet and apple, then liquify in a food processor or blender.
Blend beet and apple mixture with yogurt and egg.
Fold in flour.
Simply pour into your waffle maker until slightly browned.
Top with your kid's favorite toppings, and enjoy!
